INGREDIENTS

DRY INGREDIENTS:

  • 1.5 cup gluten flour
  • 1/4 cup garbanzo flour
  • 1 Ts garlic powder
  • 1 Ts onion powder
  • 2 Ts nutritional yeast
  • 1/2 chili powder
  • 1/2 Ts salt
  • 1/2 Ts of each herb(oregano, thyme, rosemary, marjoram)

WET INGREDIENTS:

  • 1 1/4 cup water
  • 2 Ts vegetable stock powder
  • 1 Ts soy sauce
  • 1 Ts Worcestershire sauce
  • 2 Ts liquid Smoke
  • 2 Tbsp nutrition

PROCEDURE

  • Put 1.5 cup of gluten flour in food processor with dough blade.
  • Add a quarter cup of garbanzo flour into the food processor.
  • Add the remaining dry ingredients into the food processor in the above mentioned quantity.
  • Turn on the food processor to mix all the ingredients.
  • After mixing ingredients,add all the wet-ingredients into the food processor and turn it on again.
  • Whisk it up until it becomes in dough shape.
  • When the mixture turns into dough shape,take out the dough from the processing unit.
  • Knead the dough for about 5-minutes until it becomes good enough.
  • Roll the dough into long shape which is approximately one inch in length.
  • Cut the dough into smaller slices by cutting it horizontally.
  • The slices should be half to one inch in width.

That yummy taste.But not anymore,i discovered this recipe that does wonders for me.It seems like i am actually tasting the real chicken but in actual i am not hurting those poor creatures for my selfishness.If you are coming from a fried chicken lover background(Non-Vegan),you will love this recipe as much as i do.So, lets get your hands dirty.

INGREDIENTS

  • Cooking oil

SEITAN BROTH:

  • 5 cups vegetable broth(if you don’t have broth you can use water instead),
  • 1 Ts chicken seasoning
  • 1/2 Ts black pepper
  • 2 Ts of soy sauce
  • 2 Ts of Worcestershire sauce

SEITAN:

  • 3 Ts nutritional yeast
  • 1 Ts chicken seasoning
  • 1/2 Ts sea salt
  • 1 Ts garlic powder
  • 1/2 Ts black pepper
  • 1/2 Ts Cajun seasoning
  • 1 Ts vegan Worcestershire sauce
  • 2 Ts soy sauce
  • 2 Ts almond milk
  • 3/4 cup water
  • 1.5 Vital wheat glutten

Wet dredging mixture:

  • 1/4 cup almond milk
  • 1/4 cup water
  • 3 Ts stone ground mustard
  • 1/2 ts garlic powder
  • 1/2 ts black pepper
  • 2 ts all purpose flour
  • 1 ts nutritional yeast
  • 1/2 ts chicken seasoning

Dry dredging mixture:

  • 1 1/4 cup all purpose flour
  • 1/2 ts salt
  • 1/2 ts pepper
  • 1 ts Chicken Seasoning
  • 1 ts garlic powder
  • 4 ts nutritional yeast
  • 1 ts paprika
  • 3 ts baking powder

PROCEDURE

  • First of all we need to make the broth.Add 5 cups of vegetable broth into a saucepan of medium size.
  • Then add 1 ts of chicken seasoning and 1/2 ts of black pepper.
  • Now put 2 ts of soy sauce and 2 ts of Worcestershire sauce into the broth.
  • Mix all of the ingredients together.
  • Put the saucepan on heat and lower the temperature when the mixture boils up and then finally take it off.
  • Now we need to prepare the seitan.
  • Add 3 ts of nutritional yeast,1 ts of chicken seasoning,1/2 ts of sea salt,1/2 black pepper,1/2 ts of Cajun seasoning 1 ts of Worcestershire sauce,2 ts of soy sauce,2 ts of almond milk and 3/4 cups of water into a regular size bowl.
  • Stir together all the ingredients well.
  • Then add 1 1/2 cups of vital wheat gluten into the bowl and mix them together until it forms dough shape.
  • Kneed the dough for about 30 sec.
  • Cut the dough into a few pieces.
  • Put the seitan in broth for about 20 minutes.
  • We need to make wet dredging mixture by adding 1/4 cup of almond milk,1/4 cups of water,3 ts of stone ground mustard,1/2 ts of garlic powder,1/2 ts black pepper,2 ts of all purpose flour,2 ts of nutritional yeast and 1/2 cups of ts of chicken seasoning into a small size bowl.
  • Stir up all the ingredients well.
  • We have to prepare dry dredging mixture now.
  • Take a medium sized bowl.
  • Put 1 1/4 cup of all purpose flour,1/2 ts sea salt,1/2 ts black pepper,1 ts of chicken seasoning,1 ts garlic powder,4 ts nutritional yeast,3 ts of baking powder and 1 ts paprika.
  • Whisk up all the ingredients together.
  • The the seitan out from the broth.
  • Cut the seitan in the shape of nuggets(You can cut in whatever shape you like).
  • Now take the seitan nuggets and dip it into the dry dredging mixture,then into the wet dredging mixture and back into the dry dredging mixture.
  • Put the cooking oil into a frying pan and heat it on medium flame.
  • When the oil becomes hot enough add the seitan nugget pieces into the frying pan one by one.
  • Flip sides when one side becomes golden brown.
  • Fry it until both the sides become golden brown in texture.
  • Once both sides are golden brown take it out.
  • Freshly made vegan friend chicken is ready to be served.

2.Seitan Instant-Pot Chicken

Seitan instant pot is an amazing vegan chicken recipe.Its a great addition to the seitan chicken recipes list.Cool thing about this recipe is that it really easy to make and unlike fried vegan chicken it does not contain any oil at all.It means that this recipe is vegan,tasty and at the same time healthy.We tried different vegan chicken instant-pot recipes and finally decided that we are going with this one.This recipe is something extra-ordinary.If you don’t have a instant-pot yet you have to buy one.Lets get into it.

  • Add 1 ts of salt,1 ts of soy sauce and 1 ts of Worcestershire sauce.
  • Mix the ingredients a little bit but not too much that it disturbs the shape of seitan.
  • Now close the pot and turn it on high pressure and set the time manually at about 20 minutes.
  • After 20 minutes take out the sietan from the pot and let it chill for some time and its ready to be served right away.

3.Seitan Chicken Steam

There are various ways you can make your own vegan seitan chicken.If you are a steamed chicken lover you will love this recipe as much as i do.This recipe includes homemade seitan(Surely you can use ready-made seitan).But i like the texture and taste of the homemade seitan.It can be used on anything from pizza’s to sandwiches.From Burgers to ketchup only.I know you can’t hold it anymore.So,lets get into it right away..

INGREDIENTS

  • 1.5 cups vegetable broth(you can use water instead)
  • 1.5 cups vital wheat flour
  • 2 Ts olive oil
  • 1/4 cups chickpea flour
  • 1/3 cups nutritional yeast
  • 1/2 ts paprika
  • 1 ts garlic powder
  • 1.5 ts chicken seasoning
  • 1/2 ts onion powder
  • 1/2 ts sea salt
  • 1/2 ts cumin
  • Aluminium foil

PROCEDURE

  • Whisk together vegetable broth and olive oil in small bowl.
  • In a separate medium sized bowl,take all the remaining ingredients and mix them well.
  • Once they are completely mixed up,add broth mixture into the mixed ingredients.
  • Stir up with the help of rubber spatula until the mixture leaves the sides of the bowl.
  • Now we need to make dough by kneading the mixture well.
  • Take the mixture out from the bowl and and put it into a wide opening pot(you can also knead in the same pot but it becomes inconvenient).
  • For an open pot alternative you can use cutting pot as it will be beneficial as you will need to cut it as well.
  • Knead the dough for at least 3-5 minutes until it takes a good solid shape.
  • After the dough takes a good shape roll it with a rolling pin and give it a rectangular shape and cut it into 4 equal pieces.
  • Leave the dough for a good 10 minutes to get firm.
  • Take 4 pieces of aluminium foil(about 6 inches in width) and put your pieces of seitan in it.
  • Put it into steamer and steam it for about 30 minutes.
  • After 30 minutes take seitan pieces out from the steamer and put them outside for about 10 minutes to get cooled.
  • After that put them into the zipper bags and store them into freezer for about an hour before serving them.
  • Your Vegan steamed chicken is ready to be served.ENJOY!!!!

VEGAN CHICKEN STEAK:

  • 1/4 cup soy sauce
  • 1 ts maple syrup
  • 1 ts liquid smoke
  • 1 ts miso
  • 1.5 cups hot vegetable broth
  • 1 ts dijon mustard
  • 2.5 cups vital wheat gluten
  • 1 ts onion powder
  • 1 ts garlic powder
  • 1/3 cup chickpea flour
  • 1 cup of cooked lentils
  • 2 ts browning sauce Kitchen Bouquet 
  • Steak spices

SAUCE:

  • 2 shallots finely minced
  • 2 ts vegetable oil
  • 1 ts maple syrup
  • 1 ts Worcestershire sauce
  • 1 ts coarsely ground peppercorn
  • 1 ts Dijon mustard
  • 3/4 cup vegetable broth
  • 3/4 cup non-dairy cream
  • pinch of salt

PROCEDURE

  • Take a saucepan,add soy sauce,maple syrup,liquid smoke,Dijon mustard,Miso and hot vegetable broth in it.
  • Stir it up well.
  • Put vital wheat gluten,onion powder,garlic powder,chickpea flour and green lentils in a food processor with dough blade.
  • Add the broth mixture from into the food processor and turn it on.
  • When it takes dough like shape,turn off the food processor and add browning sauce and again turn on the food processor.
  • Take out the dough from the food processor and knead it for about 2-3 minutes.
  • After kneading spread it wide with about 1.5 inches in thickness and cut it into 4 equal pieces with your hands.
  • Take a frying pan and put it on medium flame.
  • Add water into the frying pan for steam.
  • Take a wooden basket and put it on the top of the frying pan.
  • Now put aluminium foil on the top of wooden basket and cut holes with the help of a fork or knife.
  • Spread oil on the surface of the aluminium foil with the help of a brush.
  • Put all of your Seitan dough into the wooden basket and close the lid.
  • Steam it for about 20 minutes and flip its sides after 20 minutes(Steam each side for 20 minutes).
  • Once both sides are steamed for 20 minutes take it off from heat.
  • Now its time for the sauce.
  • Put oil in a frying pan and add finely minced shallots in it.
  • Keep stirring it,when it becomes golden brown put maple syrup,Worcestershire sauce,black pepper corn,Dijon mustard,vegetable broth,non-dairy cream and pinch of salt in it.
  • Keep it on low flame until it gets reduced in volume and thickens up.
  • Once it take sauce like shape take it off heat.
  • Now put oil on the sides of vegan steak and add spices.

  • 1/4 cup chickpea flour
  • 1 cup firm tofu
  • 1 ts onion salt
  • 1 ts garlic powder
  • 1 ts dried sage
  • 1 ts dried tarragon
  • Vegetable broth 5 cups
  • Medium sized onion
  • 1 ts miso paste
  • 1/2 non-dairy milk(preferably soy-milk)
  • 2 cups plain flour
  • 1 cup panko breadcrumbs
  • spices(2 tbs cracked black pepper,pinch of sea salt,1 tbs cayenne pepper,1 tbs dried chili flakes,1 ts oregano,1 tbs paprika,1 tbs of dried sage and 1 ts of all ground spices.
  • 2 tbs coconut sugar
  • Avocado oil
  • ketchup
  • salad of your choice
  • Bun

PROCEDURE:

  • Put wheat gluten into a bowl.
  • Then add chickpea flour into it and whisk them up.
  • Take a food processor or blender and add tofu,onion salt,garlic powder,dried sage and dried tarragon into it.
  • Now add soy-milk and miso paste into it.
  • Turn on the food processor until all the ingredients mix up to form a mixture.
  • Add the mixture from the food processor into the bowl containing wheat gluten.
  • Mix them up well until it takes a dough shape.
  • When the mixture takes dough shape take it out and knead it for a good 3-5 minutes until it becomes sturdy enough.
  • Make it plain with the help of hands or rolling pin.
  • Put it aside for about 10 minutes.
  • After 10 minutes take the seitan to the cutting board and cut it into 4 equal pieces.
  • Knead to give it whatever shape you want.
  • Now add the vegetable broth and chopped onion into the saucepan and put it on medium heat.
  • When broth becomes hot enough put the seitan pieces in it and cook for about 30 minutes.
  • After 30 minutes of cooking take the seitan out and let it cool.
  • Take three medium sized plates and put plain flour,chickpea flour and (2 cups of plain flour and 1 cup of panko breadcrumbs).
  • Add a few tbs of water into chickpea flour to make a batter.
  • Add all the spices into the third plate containing breadcrumbs and mix them well.
  • Also add 2 tbs of coconut sugar in the third plate.
  • Chop the seitan into pieces.
  • Coat the seitan pieces by dipping them first in plain flour,then in batter and at last in the third plate containing the breadcrumbs.
  • Repeat the process with all the seitan pieces.
  • Put the seitan pieces into fryer containing avocados oil and let it fry for about 2 minutes and check if the color of the seitan pieces has changed to golden brown.
  • You can also use pan to fry the seitan pieces.
  • After frying put the sietan chicken fried pieces into the kitchen tissue paper to soak up the additional oil.
  • Spread a pinch for salt over the sietan pieces to add flavour of crunchiness.
  • Cut the bun into pieces and apply ketchup and add the chicken pieces.
  • Add salad to the bun and enjoy delicious chicken seitan vegan burger.
